Q Is the CND teppanyaki suitable for residential use?

A Our CND teppanyaki appliances have been developed and certified for residential use. The main advantage over commercial teppan appliances is that our cook tops provide a large “hot zone”. Commercial designs usually provide smaller, mostly one portion hot spots and large warming areas as required in a hospitality environment.

Q Do I need ventilation? Which one is best?

A There are no requirements from the manufacturer’s side. However, depending on individual design, layout and/or local codes, ventilation might be required. The appliance hardly radiates any heat into the surrounding area.

We feel downdraft ventilation is best suited since it catches the cooking vapors right where they develop. Direct downdraft without a telescoping wall seems to be the most efficient.

Our CND YouTube channel provides a couple of video clips showing the actual process using plain or Selzer water, paper towels, soft absorbent cloth or “e-cloth”. We use exclusively Barkeepers Friend powder for best deep cleaning and that showroom bling.

Q Where does the grease go?

A Due to our unique proprietary “Shallow Dip” technology, all cooking juices run to the center and not off the sides. To remove excess fat, e.g. cooking bacon or fatty meats, simply take a folded paper towel with tongs and carefully dab it up and continue cooking.

Q Is the surface non-stick?

A No. Stainless steel is super easy to use when cooking at the right temperature. Any food will stick if the temperature is too low, or if too little cooking fat has been applied. We recommend a small “tester” to be on the safe side. With the right temperature and no overcrowding, food will brown nicely and release from the surface by itself when ready to turn or remove.

Q Will the top scratch?

A Stainless steel is not scratch resistant. Just like pots or pans, the appliance will show traces of use over time. To prolong the beauty of the silk brushed surface, use non-scratch utensils for cooking and soft tools for cleaning. (see maintenance chapter)

Any traces of use will not affect the temperature or cooking abilities of the teppanyaki grill cooktop. Due to the premium quality solid 304 grade stainless steel, the top can be buffed up and restored to its original silk brushed appearance.

Q What is “Contact Heat”?

A That is the temperature measured directly at the surface, hence the actual cooking temperature. A “contact” thermometer has to be used to verify. Do not be fooled by a culinary laser device. Those only work correctly on non-reflective surfaces, so the temperature might be very much hotter than indicated by the device.

Q Which countertop material/work surface is best? Can I install into granite?

A Almost any sturdy, level surface works. The manufacturer recommends reinforcing all natural stone, e.g. granite. The Cook-N-Dine model MO80 requires the use of included brackets for fortification.

Q Do you provide installation guidelines?

A A 1:1 paper template is in the box, as well as written directions. Request our electronic Auto CAD files, in .stp or .dxf format to aid in precise preparation for the installation. We strongly recommend providing all documentation to your professional countertop contractor well ahead of time.

Q What are the electrical requirements?

A Cook-N-Dine Teppanyaki Grills require a dedicated electrical breaker providing 20 AMP per outlet for 120V 1800W models.

240V models with 2250W draw just under 10 AMP and therefor work with a Nema 6-15 plug and corresponding outlet DOWLOAD SPECS. Higher wattage requires a different electrical setup.

Q Does the appliance need to be hardwired?

A No. Our teppanyaki appliances are plug and play, meaning one end plugs into the appliance, the other end plugs into a standard U.S. 120V grounded household outlet.

Q Can I install the appliance outside?

A All Cook-N-Dine appliances are XPF4 tested (humidity and splash water) and GS approved for outdoor use by the VDE Institute for appliance safety.

If completely exposed to the elements, all openings where water potentially could intrude need to be sealed properly, like around the appliance top itself and the temperature control box. In this case you need to order a special control element as well. Always read the install directions very thoroughly.

Q Do the edges get hot? What about a potential fire hazard?

A The temperature tapers off towards the edges of the cooktop, thus creating a warming area surrounding the hot cooking center. The very edges remain at ambient temperature, therefore posing no risk of burning or fire hazards. Follow the install sheets guidelines for vertical clearances.

Q How long is the warranty?

A The German manufacturer, Bechtold GmbH, warrants all residential use teppanyaki appliances for 2 years from date of purchase. When registered online, the warranty is extended for an additional 12 months. (View warranty policy and register via QR code). Overall warranty on material and workmanship is 5 years.

Q What if the appliance malfunctions?

A Under the warranty, the appliance will be either recalled and exchanged, or repaired, depending on the evaluated malfunction and manufacturer’s discretion. Review full manufacturer’s warranty HERE.

Q What are the lead times?

A For items in stock, lead time is 1-2 weeks from date of purchase. If not in stock in the U.S., we project 4-8 weeks max, except for unforeseen circumstances such as limited freight capacities out of Germany, natural catastrophes or other disasters beyond our control.

COOKING

Q What is the max temperature?

A The “Contact” temperature is capped at F 450° (230°C). Searing temperature is F 430°. Just give everything enough room (do not overcrowd) so your food will brown nicely. When cooking for a larger group, you might have to cook in batches for best results.

Q Which utensils are recommended?

A As a general rule, the thinner the utensil, the better they work. We love to work with a set of two spatulas at the same time, which makes it easier to handle food in lieu of a rim. Any heat proof kitchen utensil of choice can be used; the thinner the better. Watch out for sharp edges/corners which could scratch the surface more than necessary. Tongs are very handy as well.

Our very favorites are the very, very thin flexible metal spatulas with rounded corners, such as those from the Wusthof brand. They have the advantage of being able to slide under anything with ease, hence hardly scratching the surface when used properly. Occasionally have some available with your purchase.

Q What can I cook besides stir-fry and breakfast?

A Anything besides soup is a go. Please refer to our sample recipe webpage for a wide variety of dishes, start experimenting and then take it from there to cooking your very own creations. Recipes are just meant to train in different techniques. The sky is the culinary limit.

Q Can I use cooking spray?

A Absolutely. A tip to avoid overspray and burnt in oil spots: spray the food, not the cooking surface. The cooktop will stay much cleaner that way.

Q Can I use knives on the teppanyaki?

A This is a double-edged sword. Generally speaking, the solid, premium stainless steel top cannot be harmed, just scratched if you are not careful. Also, a knife will dull fast when used to cut on a very hard surface. That said, we recommend a designated knife for this chore, at least. Best practice is certainly to have a cutting board handy.

Q Is there a cover for the CND teppanyaki?

A No, there is not, for two reasons. Inside your kitchen, the cook top can serve as additional work/prep space when not in use for cooking. Outside, any cover could potentially create condensation which in turn might trigger corrosion or rust. Just keep the teppanyaki appliance clean on a regular basis (like wipe down once a week) so no dirt or corrosive particles can adhere to the surface for a prolonged time.

Q Do you offer any accessories?

A A stainless steel custom-made cloche (steam dome) can be special-ordered, which comes in quite handy for certain dishes, e.g. mussels and hard vegetables, or soft steaming seafood. From time to time we carry customized metal spatula sets by Wusthof Germany.

Q Will the top permanently discolor?

A No, it will not, provided it is being cleaned properly after each use, with absolutely no food traces remaining. When used for a prolonged time on high temperatures, sometimes whitish or bluish stains can occur. No worries. They will disappear when cleaning with the Barkeepers method.

Q Which cleaners can be used on the CND teppanyaki appliance?

A Basic cleaning is done by heating up and adding a bit of water or seltzer, and cooking off the food remains, using a straight edged spatula. “E-cloth” also comes in handy for in between clean up, or simply use paper towels. To deep clean and bring back the bling, we recommend BARKEEPERS FRIEND POWDER which works with oxalic acid on the cold surface. Click here to download our detailed cleaning & maintenance guide.

Q Does the CND teppanyaki need to be “seasoned” or oiled?

A Only porous surfaces need to be seasoned. Stainless steel is non-porous; however, we do recommended cooking with oils or fats.
